This lemon asparagus pasta recipe takes 15 minutes to make and is a perfect lunch. It serves two people and you can enjoy it hot or cold.
Ingredients:
1/2 box of gluten-free pasta
1/2 lemon
1/2 cup of hummus
1/2 cup of pasta water
7 asparagus spears
1 tbsp minced garlic
Dried parsley
Salt & pepper
Red chili flakes
Nutritional yeast
Garlic powder
Instructions:
Cook your pasta of choice
Add garlic and asparagus to a pan with oil
Cook until the asparagus has softened
Toss in a handful of spinach to wilt
Add hummus and pasta water directly in the pan with the asparagus
Mix together the sauce and toss in the pasta (once rinsed)
Add the juice of half a lemon
Add dried parsley, salt and pepper, garlic powder, nutritional yeast and red chili flakes
Serve either hot or cold
