Black Bean Quesadillas

Ingredients:

  • 1/2 can of rinsed chickpeas

  • 1/2 can of rinsed black beans

  • half of a tomato

  • fresh cilantro

  • smoked paprika

  • salt & pepper

  • chili powder

  • onion powder

  • vegan cheese shreds

  • vegan sour cream

  • hot sauce

  • salsa

  • 2 gluten free tortillas


Instructions:

  1. Add chickpeas, black beans and tomato to your food processor/blender and pulse. You do not want it to be too smooth, so don’t over process.

  2. Add mixture to a bowl and then add all of the spices.

  3. Add fresh cilantro and mix through.

  4. Add the mixture to a tortilla and then place in an oiled frying pan.

  5. Top with vegan cheese shreds.

  6. Place another tortilla on top and add a heavy object to held press it down.

  7. Cook for a few minutes and then flip.

  8. Remove from heat, cut and serve with sour cream, hot sauce and salsa.
