Buffalo Jack Stuffed Peppers

I saw this delicious recipe posted on TikTok (@nutritiouslynikki) and I instantly knew I wanted to veganize it. If you’ve been following my page for a while it will come as no surprise that I love anything that has to do with Buffalo sauce and ranch. I switched up the chicken for jackfruit and made my own vegan ranch. I hope you love these just as much as I do!!


Ingredients:

• 3 bell peppers (cut in half)

• 1 can of young green jackfruit

• 1/2 bag of cauliflower rice (or blitz up a head of cauliflower)

• 1/2 cup buffalo sauce

• 1/2 cup vegetable broth

• 3 tbsp vegan sour cream

• 2 tbsp ranch powder (or omit & add dried dill)

• 1/2 tbsp onion powder

• 1/2 tbsp garlic powder • 1/2 tbsp paprika

• 1/2 tsp chicken seasoning

• black pepper

• Vegan cheese shreds

• Green onion

• Vegan ranch


Instructions:

  1. Preheat oven to 400°

  2. Wash and prepare your peppers

  3. Drain and rinse jackfruit and then squeeze excess water out through a kitchen cloth

  4. Add butter to a pan and add jackfruit with all of the spices, 1/2 cup of veg broth, 1/2 cup of hot sauce & ranch powder

  5. Cook down and add the cauliflower rice and sour cream

  6. Cook for 5-10 minutes until jackfruit has softened

  7. Add your peppers to a baking dish and fill with the buffalo jackfruit mixture

  8. Cover with tin foil and bake for 20 minutes

  9. Remove from the oven and top with vegan cheese shreds

  10. Bake for another 15 minutes with the tin foil on

  11. Remove the tin foil and broil until golden

  12. Top with vegan ranch and green onion. Enjoy!
