This cucumber salad is perfect as a summer side or works as a great cold lunch option. It takes minimal ingredients and time, which is perfect when you're short on time. It holds well in the fridge and serves four.
Ingredients:
2 peeled and sliced cucumbers
1/2 cup coconut yogurt
2 tsp dried dill
1 tsp vinegar
1 tsp minced garlic
1/4 tsp salt and pepper
1 tsp sugar
1 tbsp vegan mayo
Instructions:
Peel and slice two cucumbers
Make the sauce by combining yogurt, dill, vinegar, garlic, salt and pepper, sugar and mayo
Toss the sauce in with the cucumbers
Refrigerate until serving
