This is my all time favourite breakfast to make because it's quick, protein packed, has lots of veggies and is great for meal prepping. I like to mix it up and serve my tofu scramble in a burrito, a bowl or even as breakfast tacos.
Ingredients:
1 block of extra firm tofu
1 tbsp cumin & cajun
1 tsp turmeric, garlic powder and chili powder
1/2 tsp onion powder
Salt and pepper to taste
Spinach - one handful
Veggies (I used zucchini, mushrooms and red pepper)
1 tbsp nutritional yeast
1 tsp minced garlic
Instructions:
Press the tofu in a kitchen towel to get the excess water out
Add oil to your frying pan and crumble the tofu in with your hands
Add all of the spices except nutritional yeast
Cook until it starts to brown and then add in your diced vegetables
Once the vegetables have cooked, add in minced garlic, spinach and nutritional yeast
Cook for another 2-3 minutes and then remove from heat
Serve in a bowl with your favourite toppings on on a burrito
