It's finally time for summer salads! This Greek Pasta Salad is very easy to make, stores well in the fridge and is one of my family's favourite recipes.
Ingredients:
1 box of pasta (I used gluten free)
Grape tomatoes
Black olives
Fresh parsley
1/2 cucumber
1 red pepper
1/4 block of vegan feta (I used Violife)
Onion (I just don't like it so I left it out)
Dressing:
1/2 cup olive oil
3 tbsp red wine vinegar
1 1/4 tsp dried oregano
2 tbsp lemon juice
1 1/2 tsp minced garlic
2 tsp vegan honey or maple syrup
Salt to taste
Instructions:
Boil your pasta and let it cool down in the fridge
Mix together the dressing
To your cold pasta, add olives, cucumber, red pepper, fresh parsley, vegan feta and grape tomatoes
Pour over your dressing and then mix
Let it cool down in the fridge and enjoy!
