I wanted a quick lunch that had a decent amount of protein, so I whipped up these Mediterranean pitas with both hummus & chickpeas. These are not only delicious and healthy, but they come together in less than 10 minutes.
Ingredients (per pita):
Pita (I used gluten-free)
0.5 cup of rinsed chickpeas
1 tsp olive oil
1 tsp lemon juice
1/4 tsp thyme
1/4 tsp minced garlic
salt & pepper
hummus of choice (I used red pepper)
olives
spinach or arugula
cherry tomatoes
vegan feta (I used Farm Boy’s)
balsamic glaze
Instructions:
Warm up your pita in the oven or microwave
Drain & rinse chickpeas. Toss in olive oil, lemon juice, salt & pepper, thyme and minced garlic
Spread hummus all over the pita
Top with spinach, chickpea mixture, feta, olives & cherry tomatoes
Add balsamic glaze on top
Cut into slices & enjoy!
