Portobello Pizzas

I bought a large pack of portobello mushrooms from Costco that I wanted to use up, so I decided to create these portobello pizzas. You can fill them with vegan pepperoni, beef, or whatever toppings you like on your pizza. Enjoy!



Ingredients:

  • vegan pesto

  • vegan mozzarella

  • portobello mushrooms

  • olive oil

  • italian seasoning

  • minced garlic

  • marinara sauce

  • red chili flakes

  • baby spinach


Instructions:

  1. Preheat oven to 425°

  2. Clean off your portobellos, remove stems and scrape out the inner part

  3. Mix together olive oil, Italian seasoning and minced garlic and then brush it on both sides of the mushrooms

  4. Add pesto and marinara on the inside of the mushroom

  5. Top with vegan mozzarella, red chili flakes, spinach or whatever toppings you like

  6. Bake for 10 minutes and then broil until the cheese is melted

  7. Cut with a knife & fork and enjoy!
