Smoky Beans & Avocado Toast

Ingredients:

  • 1/2 can cannellini beans

  • 1 tbsp sun-dried tomatoes in oil

  • 1/2 tsp smoked paprika

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1 tsp minced garlic

  • 1/4 tsp liquid smoke

  • 1/2 tsp chipotle pepper purée

  • 1/2 tsp black pepper

  • 1/2 tsp jalapeño brine

  • 1 avocado

  • 2 pieces of bread

  • 1 tsp fresh cilantro

  • Balsamic glaze


Instructions:

  1. Add sun-dried tomato oil to a frying pan over medium heat

  2. Rinse and drain cannellini beans and then add to the frying pan

  3. Add spices, garlic, liquid smoke, chipotle and jalapeño brine

  4. Cook until beans get crispier

  5. Remove from heat

  6. Mash a ripe avocado on your toasted bread

  7. Add the beans on top of the avocado

  8. Add me fresh cilantro and drizzle balsamic glaze on top
