Growing up my grandma always made me soup and grilled cheese and now it's my favourite comfort meal. This vegan broccoli cheddar soup is always a hit and is super easy to make! Make sure to serve it up with some grilled cheese.
Ingredients:
4 cups of steamed broccoli
1 large carrot (peeled and diced)
1 celery stalk (diced)
1 tbsp butter (Vegan Becel)
2 cups peeled potatoes (diced)
1/2 cup cashews
4 cups vegetable broth
3 tbsp nutritional yeast
1/2 tbsp salt
1 tsp black pepper
1 tsp paprika
1 cup of vegan cheese shreds
Instructions:
Wash and chop 4 cups of broccoli to be steamed
Peel and dice your carrots and potatoes. Dice your celery.
To a pot with butter add in your carrots, potatoes, celery, cashews, nutritional yeast, salt, pepper, paprika and vegetable broth
Bring to a boil for 20 minutes covered
Remove from heat and blend with an immersion blender or transfer to a high speed blender
Add in 1/2 of the steamed broccoli and blend
Add the rest of the broccoli, plus cheddar cheese, into the soup and stir
Serve with grilled cheese, bread, or alone, and enjoy!
